I really started to notice it this year.

Since GERD, Barrett's esophagus and a hiatal hernia and I have been well-acquainted for decades, I'm guessing my first question would be have you gone or would you consider going to either your medical care provider or a GI specialist with your symptoms? It may not be GERD (heartburn), but it could be a GI issue that causes you not to be able to fall asleep well.

Also, a mug of warm milk with honey can do wonders to help you nod off... think I might treat myself to one now, at 3:40 in the morning.
